RECIPE: Grilled Pesto, Mozzarella and Tomato Sandwich
1 ciabatta sandwich roll
½ tbsp olive oil
2 tbsp basil pesto
2 slices mozzarella cheese
2 slices of tomato
A pinch of salt and pepper
1 Heat a panini press or sandwich grill.
2 Cut the roll horizontally. Brush the outside of each half with olive oil.
3 Spread the pesto on the inside of both halves.
4 Layer the cheese and tomato on the bottom layer of bread. Season with salt and pepper.
5 Place the sandwich on the grill and grill for four minutes or until the cheese is melted
6 Slice the sandwich diagonally and serve.
