RECIPE: Grilled Mac ‘n’ Cheese Sandwich
1 tbsp unsalted butter, divided
1 cup prepared macaroni and cheese, warmed
½ onion, thinly sliced
Salt and pepper to taste
¼ cup barbecue sauce
½ cup roast chicken, shredded
2 slices sourdough bread
3 slices sharp cheddar cheese
1 Melt ½ tbsp butter in a frying pan over a medium heat.
2 Add the onions and stir until caramelised, about 20 minutes.
3 Season with salt and pepper.
4 Combine the barbecue sauce and chicken in a saucepan and cook until warmed through, about 5 minutes.
5 Preheat the panini press.
6 Melt the remaining butter and brush one side of each bread slice.
7 Flip over the bread and begin layering the sandwich – first the cheddar, then the macaroni, cheddar again, the shredded chicken, the onions and another slice of cheddar.
8 Top with the other slice of bread, buttered side up.
9 Cook the sandwich in the press until the cheese melts and the bread is golden.
