RECIPE: Grilled Cheese and Turkey Bacon Sandwich
1 tbsp butter
1 medium onion, sliced
4 slices turkey bacon
2 tbsp mayonnaise
A few dashes of Tabasco
2 slices sandwich bread
1 whole hard-boiled egg, peeled and sliced
Salt And pepper, to taste
2 slices of Swiss cheese
Additional butter, for grilling
1 Melt the butter in a frying pan over medium-low heat and slowly cook the onions for about 20 minutes, stirring frequently. When they’re deep golden brown and soft, set the pan aside.
2 Fry the bacon in the same frying pan until slightly crisp. Remove and drain on paper towels.
3 Combine the mayonnaise with the Tabasco and stir. Taste and add more Tabasco if required.
4 Sprinkle the sliced eggs generously with salt and pepper.
5 Spread one side of each piece of bread with the spicy mayonnaise.
6 Layer half the egg, then the bacon, cheese, onions, the other half of the eggs and the second slice of cheese.
7 Spread one side of the assembled sandwich with softened butter and put it butter-side down on a frying pan over medium-low heat.
8 Spread the top side with butter, then continue pan grilling the sandwich until the bread is golden and slightly crisp, the filling is warm and the cheese
9 Cut in half with a sharp serrated knife and serve.
