Recipe: Gluten-Free Bread with Seeds and Nuts

Makes 1 loaf

500g white rice flour
65g potato flour
190g tapioca flour
30g soya flour
2 tsp xanthan (guar) gum
1 tbsp linseeds
50g coarsely chopped mixed nuts
125g dry fat-free milk powder
2 tsp salt
2 tbsp sugar
1 ½ tbsp instant yeast
375ml lukewarm water
1 ½ tsp apple cider vinegar
2 large eggs, lightly beaten

1 Combine all the dry ingredients in a large mixing bowl.
2 Add the liquid ingredients and stir until everything comes together.
3 Stir to form a smooth dough.
4 Place the dough in a greased bread tin and cover with a damp cloth.
5 Leave in a warm place to rise until it has doubled in size.
6 Preheat oven to 170C.
7 Bake for 1½ hours until cooked through.
