Recipe: Garlic and Date Chutney
MAKES ABOUT 750M
300g dried dates, pitted and diced
1 piece fresh ginger, about 2cm long, finely chopped
5-6 cloves garlic, crushed
1 onion, finely diced
200g apples, peeled, quartered, cored and diced
150ml orange juice
200g brown sugar
300ml apple vinegar
60g walnuts, chopped
1 Place all the ingredients, apart from the walnuts, in a saucepan with a pinch of salt and bring to the boil.
2 Reduce the heat and simmer for around 1 hour stirring occasionally so that the mixture does not stick. If necessary add some more juice.
3 Stir in the nuts and serve with various types of soft cheese.
To store, transfer into hot, sterilised jars, close tightly, stand upside down and leave to cool. Once opened, store in the fridge and consume within two
