Recipe: Fig Bruschetta with Poached Cherries
12 pieces of fruit bread crostini
150g goat’s cheese 150g cream cheese
1 tsp fresh thyme, finely chopped
100g fresh figs, cut into quarters
A drizzle of honey
1 Mix the goat’s cheese, cream cheese and fresh thyme together until the mixture is smooth.
2 Poach the cherries in a little water and the honey until they become soft.
3 Keep the poaching liquid for drizzling over the finished canapé.
4 To assemble, pipe approximately 25g of your goats cheese mix onto the crostini.
5 Top with a piece of fresh fig and 2 poached cherries.
6 Drizzle a little of the poached cherry water over the fig.
7 Garnish with your favourite herb and serve.
