Sweet pancakes with figs

Recipe: Fig and Walnut Pancakes

1 cup figs, coarsely chopped
½ cup coarsely chopped walnuts
1 cup flour
1 tbsp baking powder
1 tsp cinnamon
½ tsp nutmeg
½ tsp salt
2 eggs
1 ½ cups milk
1 tbsp vegetable oil
1 tsp vanilla
2 figs, sliced
Cream for drizzling (optional)

1 In a large bowl, stir together the figs, nuts, flour, baking powder, cinnamon, nutmeg and salt.
2 In separate bowl, beat together the eggs, milk, oil and vanilla. Add the wet mixture to the dry ingredients and stir to blend.
3 Pour about 1/3 cup batter for each pancake on to a hot, lightly greased frying pan. Cook until the batter bubbles on top and the batter is set at edges.
4 Turn to brown on the other side. Serve hot with additional fresh figs and cream, if desired
