RECIPE: Egg White Fajita Omelette

4-5 large egg whites

2 tbsp salsa

1 whole wheat tortilla

¼ cup mixed capsicums, chopped 

1 tbsp minced onion

½ avocado, chopped

3 tbsp black beans, rinsed and drained

1 tbsp tomato, chopped

A handful of green leaves of your choice


1 Drizzle some olive oil into a frying pan set over a medium-high heat.

2 Add the capsicum, onion, black beans and tomato and sauté for 1-2 minutes. Set aside.

3 Add another drizzle of oil to the same pan, setting the heat to medium.

4 Pour in the egg whites, swirling the pan as you go, to cover the entire bottom of the pan.

5 Cook for a minute until set.

6 In the meantime, heat your tortilla for about 30 seconds in the microwave.

7 Flip the omelette.

8 Spoon the vegetable mixture on to the omelette.

9 Add your green leaves.

10 Lay your tortilla on a plate.

11 Lay the omelette on top.

12 Add the salsa and avocado.

13 Roll the tortilla tightly. cut into half and serve.
