Recipe: Edible Gifts: Pine Nut Biscuits
For the dough
250g ground almonds
4 drops almond essence
2 egg whites
3 tbsp icing sugar, for the work surface
1 egg white
200g pine nuts
A sprinkling of icing sugar
1 Heat the oven to 200C and line a baking tray with baking parchment.
2 Place the almonds, sugar, essence, marzipan and the egg whites into a bowl and mix into a smooth dough using a whisk with dough hook attachments.
3 Sprinkle the icing sugar onto the work surface and roll the dough into a roll about 70cm long.
4 Cut into 2cm thick slices and, with egg-white-moistened hands, shape into long flat biscuits.
5 Sprinkle the pine nuts on a plate and roll the biscuits in them.
6 Place on the prepared baking tray and bake for 10-15 minutes until golden brown.
7 Leave to cool and dust with icing sugar.
