RECIPE: Deep Pan Pizza
MAKES 3 PIZZAS/SERVES 4
FOR THE BASE
11/³cups warm water
¼ cup non-fat dried milk
½ tsp salt
4 cups flour
1 tbsp sugar
1½ tsp instant active dry yeast
2 tbsp vegetable oil, for the dough
18 tbsp vegetable oil (6 tbsp per pan)
FOR THE SAUCE
1 tsp dry oregano
½ tsp marjoram
½ tsp dry basil
½ tsp garlic salt
YOU WILL ALSO NEED:
350g shredded mozzarella
Toppings of your choice
1 Place yeast, sugar, salt, and dried milk in a large bowl.
2 Add water and stir to mix well. Allow to sit for two minutes.
3 Add oil and stir again. Add flour and stir until dough forms and flour is absorbed.
4 Turn the dough out on to a surface and knead for about 10 minutes.
5 Divide the dough into three balls.
6 Take three 23cm cake pans and put 6 tbsp of oil in each making sure it is spread evenly.
7 Using a rolling pin, roll out each dough ball into a circle of about 23cm.
8 Place the dough circles in the cake pans.
9 Spray the outer edge of the dough with cooking spray.
10 Cover with a plate. Place in warm area to rise for 1 to 1½ hours.
11 Prepare the sauce by combining all the ingredients and allowing the mixture to sit for one hour.
12 Preheat the oven to 220C.
13 Ladle 1/³ of the sauce on to the dough and spread to within 2½cm of the edge.
14 Top with a small sprinkling of mozzarella cheese, and then add your desired toppings.
15 Add a generous amount of mozzarella to finish and place in the oven, cooking until the cheese is bubbling and the outer crust has browned nicely.
