RECIPE: Croque Madame

1 egg
3 slices of chicken or turkey
½ tbsp butter
2 slices of white bread
Parmesan cheese (optional)

For Béchamel Sauce

1 tbsp butter
1 tbsp all-purpose flour
½ cup milk
Salt and pepper to taste
½ cup grated cheddar cheese


1 Make the béchamel sauce by melting the butter over a medium heat until it starts to bubble.

2 Add the flour and stir continuously for about 30 seconds or until it begins to smell nutty.

3 Whisk in the milk and bring to the boil. Lower the heat to low.

4 Add the cheese, salt, and pepper. Cook the sauce until it is thick enough to coat the back of a spoon. Set aside.

5 Heat a frying pan over a medium heat. 

6 Take two slices of bread, and butter each slice of bread on one side only. 

7 Lay the bread, buttered side down, in the frying pan.  

8 Add about a tbsp of Béchamel sauce and the three slices of chicken. 

9 Place the other slice of bread on top (buttered side up). 

10 Brown each side of the sandwich. 

11 Turn on your grill. 

12 Take about a tbsp of béchamel sauce and smooth it out on top of the sandwich. Sprinkle on the parmesan cheese, if using.

13 Place under the grill for about 2 minutes, or until the top of the sandwiches are browned.

14 Meanwhile fry the egg, sunny side up.

15 Top the sandwich with the fried egg, add a pinch of salt and pepper and some more béchamel sauce, if desired, and serve.
