Recipe: Chicken, Turkey and Fig Parcels

Comforting flavours wrapped in flaky pastry

SERVES 4

INGREDIENTS
Butter, for greasing
3 chicken breast fillets, sliced
5 sheets filo pastry
40g melted butter
4 figs, sliced
6 to 8 slices sliced deli turkey
120g feta cheese

METHOD
1 Heat the oven to 180C and grease a baking tray with butter.
2 Season the meat on all sides with salt and ground black pepper.
3 Work with one filo sheet at a time. Cover the rest with clingfilm while you work. Brush the sheet with butter.
4 Place the chicken, figs, deli turkey and cheese in layers in the middle of the sheets. Bring the pastry up and over to create neat parcels. Repeat with the remaining pastry and mixture
5 Brush each of the parcels with butter and bake for around 30 minutes until golden brown.
