Recipe: Chicken Po Boy Sandwich
SERVES 2 TO 3
340g skinless, boneless chicken breasts, cut into 7½ cm cubes
¼ cup dried breadcrumbs
2 tbsp unsalted butter
Salt and freshly ground black pepper, to taste
1 whole loaf of Italian bread split in half vertically
2 cups shredded iceberg lettuce
220g ripe tomatoes, cut into slices
FOR THE SAUCE
¼ cup minced red onion
1 tbsp chopped capers
1 tsp minced garlic
1 tsp lemon zest
2 tsp fresh lemon juice
1 tsp Cajun seasoning
1 cup mayonnaise
1 Make the sauce by combining the red onion, capers, garlic, lemon zest, lemon juice, Cajun seasonings and mayonnaise. Set aside.
2 Dredge the chicken in breadcrumbs.
3 Heat some butter in a large frying pan. When the foaming subsides, brown the chicken on all sides for about 10 minutes or until cooked through. Season to taste with salt and pepper.
4 Spread the bread with the Cajun sauce, top with the fried chicken, shredded lettuce and tomato slices. Close and slice into individual portions.
