RECIPE: Chicken, Mango and Avocado Sandwich
1 ripe medium avocado, mashed
1 tbsp freshly squeezed lime juice
½ tsp green Tabasco
1 cup baby spinach
300g skinless, boneless chicken breast, roasted and sliced
1 mango, peeled, pitted and sliced
4 small wholegrain rolls, split
1 Combine the avocado, lime juice and Tabasco in a small bowl.
2 Spread the top and bottom halves of the rolls with 2 tbsp of the avocado mixture.
3 Layer ¼ cup of the spinach, ¼ of the chicken and ¼ of the mango on the bottom halves.
4 Top with the other halves of the rolls and serve.
