Recipe: Cauliflower Crust Pizza
1 head cauliflower, coarsely chopped
¾ cup shredded part-skimmed mozzarella cheese
¾ cup shredded or grated parmesan cheese
4 egg whites
1 tbsp Italian seasoning
½ tsp garlic powder
Salt and pepper, to taste
1 Preheat oven to 220C.
2 Place the cauliflower florets into a food processor and pulse until finely chopped with no chunks.
3 Transfer the chopped cauliflower to bowl, cover with a paper towel and microwave for 8 minutes until cooked through. Allow to cool briefly before squeezing out as much water as possible with a cheese cloth or paper towels (try to get all of it out for a crispy crust).
4 Mash the cauliflower and allow to cool for about 10 minutes.
5 Add the mozzarella cheese, parmesan cheese, Italian seasoning, garlic powder, egg whites, salt and pepper to the mashed cauliflower. Mix thoroughly to combine.
6 Cover a large baking sheet with aluminium foil and coat with oil spray.
7 Pour the cauliflower ‘dough’ on to the tin foil and shape into a pizza crust. Place in oven for 15 to 20 minutes until golden brown and crispy.
8 Add the toppings of your choice, and then place under a hot grill until the cheese is brown and bubbly.
