Recipe: Blueberry Black Bean Burgers

A fruity spin on a veggie favourite


8 to 10 burger buns
1 medium onion, roughly chopped
½ cup carrots, chopped
½ cup sweet red pepper, roughly chopped
2 tbsp fresh coriander, chopped
2 cans black beans, drained
1 cup cooked brown rice
1 tsp garlic powder
1 tsp sea salt
¼ cup cornmeal
½ cup whole wheat flour
¼ cup blueberries, fresh or frozen
2 to 3 tbsp extra-virgin olive oil
Sliced Brie or camembert, quantity as preferred

2 cups blueberries, fresh or frozen
½ cup water, divided
1 cup orange juice
¾ cup white sugar
3 tbsp cornflour
½ tsp almond extract
1/8 tsp ground cinnamon

1 Begin by preparing your sauce. In a saucepan set over a medium heat, combine the blueberries, ¼ cup water, orange juice and sugar. Stir gently, and bring to the boil.
2 In a cup or small bowl, mix together the cornflour and ¼ cup cold water.
3 Gently stir the cornflour mixture into the blueberries, being mindful not to crush the berries. Simmer gently until thick enough to coat the back of a metal spoon, about 3 to 4 minutes.
4 Remove from heat and stir in the almond extract and cinnamon. Thin the sauce with water if it is too thick for your liking and set aside.
5 Place the chopped onion, carrots, pepper, coriander, brown rice, and half of the black beans in a food processor and pulse until blended, but still slightly chunky.
6 Add the garlic powder, salt, turmeric and chilli powder and pulse again in quick bursts for a few seconds to combine the flavours.
7 Add the remaining black beans and process again for a few more seconds.
8 Transfer the mixture to a bowl and add the cornmeal and flour. Mix together using your hands.
9 In a separate bowl, mash the blueberries with a fork. Add the blueberries to the black bean mixture with the juice. Combine again using your hands. Shape the mixture into patties.
10 Take a large frying pan and set over a medium high heat, with just enough olive oil to coat the bottom. Preheat the oven to 90C.
11 Cook the patties in batches, until golden brown on each side.
12 Transfer to the oven to keep warm. Repeat with the remaining mixture.
13 Lightly toast the burger buns.
14 Add a patty to the bottom half of each bun, top with brie and a drizzling of blueberry sauce before adding the top half of the bread to serve.
