Deep fried Indian breads

INGREDIENTS

1kg all-purpose flour

1 tsp dried active yeast

1 egg, beaten

1 can 7 Up

1 tsp salt

Water, as required

METHOD

1 Place the flour in a bowl and combine with the yeast and salt.

2 Add the beaten egg and mix to combine.

3 Add the full can of 7 Up, and mix.

4 Add more water as required and knead vigorously to achieve a smooth dough.

5 Cover the bowl and place in a warm area for about an hour, or until the dough has doubled in size.

6 Separate the dough into 10 evenly sized balls.

7 Roll each ball into a circle about 5mm thick.

8 Allow the rolled circles to rest a while.

9 Heat the oil in a large deep frying pan, over a medium-high heat.

10 Fry the bhaturas one at a time, very carefully. You will know that you have achieved the perfect temperature when the bread puffs within a few seconds.

11 When it’s golden brown on one side, flip and fry the other.

12 Drain the bhaturas on kitchen paper and then serve with your favourite curry.
