
RECIPE: Bean Salsa
Fresh and packed with ingredients that keep you fuller for longer, this is a fab portable meal
SERVES 4
INGREDIENTS
2 cups canned sweet corn
1 cup canned fava beans
1 cup canned chickpeas
3 big tomatoes, chopped
6 leaves lettuce, chopped
1 shallot, chopped
2 tbsp lemon juice
2 tbsp balsamic vinegar
¼ cup olive oil
Salt and pepper, to taste
METHOD
1. In a large bowl, mix all the ingredients and serve with flatbread of your choice.
