RECIPE: Banana, Lime and Cashew Nut Whip

Healthy recipe developer Gaby Tayler shares her perfect post-workout snack

INGREDIENTS
100g raw and unsalted cashew nuts
5 large bananas, sliced
350ml natural yoghurt
1 tsp clear, runny honey
1 lime, zest 
½ lime, juice 

METHOD
1. Place all the ingredients except the lime juice and honey into a food processor.
2. Mix until smooth and well combined – about 2 to 3 minutes.
3. Add the lime juice and honey, mix again for a minute or so. Taste.
4. Add more lime juice and/or honey to taste. Chill for 1 hour before serving. 

COOK’S TIP
You can freeze this for a healthy sorbet dessert, serve chilled with a coconut tuile, or eat as part of a healthy breakfast with some granola sprinkled on top. For a great post-workout snack, eat it as it is! For a dairy-free whip, just replace the natural yoghurt with organic, GM-free soya yoghurt.
