1 cup mashed ripe banana
½ tsp ground cinnamon
2 cups rolled oats (try gluten-free)
½ cup desiccated coconut
½ cup raisins or dried cranberries
¼ cup honey
¼ cup olive oil
1. Preheat the oven to 160C (fan) and line a baking tray with baking paper.
2. Put all the ingredients in a bowl and mix well using your hands until the mixture is well-combined.
3. Use a tablespoon to measure out the cookies and roll them into balls. Flatten them as you place them on the baking tray.
4. Bake for 25 minutes and then set aside to cool.
