2 large sweet potatoes, cut into fries
Olive oil, to coat
¼ cup finely grated Parmesan
2 tbsp garlic powder
Fine sea salt, to taste
Freshly ground black pepper, to taste
In a large bowl toss all the ingredients together and drizzle in enough olive oil to coat all the fries. Make sure the seasoning is evenly distributed.
Lay the fries onto a non-stick oven sheet in an even layer and bake at about 220C for 10 minutes on one side, then 10 minutes on the other. Test the tenderness and cook for another 5 to 10 minutes as needed.
