8 22cm x 35cm sheets of frozen filo dough, thawed

¼ cup butter, melted

1 cup brie

½ cup fig preserve

½ cup lightly toasted walnuts

1 Preheat the oven to 175C. Line a baking tray with parchment.

2 Work with one filo sheet at a time, keeping the rest covered with clingfilm to prevent them from drying out.

3 Lay the filo sheet on the baking tray and brush lightly with melted butter. Repeat with the remaining sheets of filo, layering one on top of the other, slightly rotating each sheet over the one beneath.

4 Place the brie in middle of the filo sheets.

5 Spread the fig preserve on top of the brie and sprinkle with the toasted walnuts.

6 Fold over filo sheets to close, pressing lightly to seal. Lightly brush the outside with butter.

7 Bake for 20-25 minutes, or until golden brown.
