RECIPE: Avocado Salad
2 avocados, halved and pit removed
10 cherry or Rosa tomatoes, quartered
½ red onion, diced
2 handfuls baby rocket, roughly chopped
½ lemon, juice
Salt and pepper, to taste
1. Scoop out the avocado flesh, leaving the skins intact. Chop into cubes and mix with the other ingredients. Season to taste and spoon back into the avocado skins to serve.
