Recipe: Apple, Egg and Rocket Salad with Feta Vinaigrette
2 apples, cored and thinly sliced
2 bunches of rocket
8 hard-boiled eggs, quartered
A handful of shelled walnuts
FOR THE VINAIGRETTE
85g feta cheese, crumbled
2½ tbsp red wine vinegar
1 tbsp water
½ tsp dried oregano
¼ cup plus one tablespoon extra-virgin olive oil
Salt and freshly ground pepper, to taste
1 Wash and completely dry the rocket, and place into a bowl, together with the apple slices and quartered boiled eggs.
2 Place the crumbled feta, red wine vinegar, water, oregano and olive oil into a food processor, and pulse until the vinaigrette is smooth.
3 Season with salt and pepper and add a generous handful of walnuts.
4 Dress the salad with the vinaigrette and serve immediately.
