Recipe: Aloo Tikki
1 tsp salt
1 tsp cumin powder
1 sprig mint, chopped
1 tsp ginger purée
1 tsp green chilli purée
2 heaped tbsp cornflour
1 Peel the beetroot and boil until tender.
2 In a separate saucepan, boil the potatoes until soft.
3 When cool enough to handle, finely chop the beetroot, removing any excess water and place in a bowl.
4 Peel and grate the potatoes into the bowl.
5 Add the remainder of the ingredients and mix with your hands to combine.
6 Make small patties out of the mixture and set on a plate.
7 Heat about 2 tbsp of oil in a shallow frying pan until moderately hot.
8 Fry the patties (tikkis) in batches until golden and crisp on one side, then gently flip and repeat on the other side.
9 Drain the tikkis on kitchen towels.
10 Serve with coriander, mint or tamarind chutney.
