Quinoa Salad with Feta and Mint
Boil the quinoa in chicken or vegetable stock to give it a better flavour.

INGREDIENTS
2 cups quinoa, cooked and cooled
1 medium cucumber, chopped
½ cup celery, chopped
2 tbsp fresh mint, chopped
1 cup good quality feta

METHOD
Simply mix all the ingredients together and serve with the same dressing as the Niçoise salad. You can add in any other vegetables you like.
