Potato Cakes

A soon-to-be staple of weekend mornings


2 medium potatoes, peeled and cut into 2 ½ cm pieces
90g feta cheese
2 tbsp dried chives
1 egg
2 tsp milk
1 tbsp olive oil
4 poached eggs
Green salad

1 Place the potatoes in a pan of rapidly boiling water for about 15 minutes or until tender.
2 Drain them in a colander and mash with a potato masher.  Spread the mashed potatoes on a plate and allow to cool until it is easy to handle.
3 Crumble the feat into small pieces.
4 In a medium bowl whisk together the egg, milk and chives. Add the potatoes and mix well. Stir in the feta. Divide the mixture into four equal portions and shape into patties.
5 Heat the oil in large non-stick frying pan.  Add the potato patties and fry on one side for about 7 minutes until golden. Flip and brown the other side for another 7 minutes.
6 Remove the patties, top with a poached egg and serve with a side of green salad.
