1.2kg Angus beef tenderloin
Olive oil
Salt and pepper
Roasted garlic flakes, for garnish

Serves 4

1. Cut the meat into four equal fillets. Tie with butcher’s twine to keep its shape.
2. Mix a little olive oil, pepper and salt, and rub over fillets to coat. Set meat aside.
3. Place beef on a hot grill for 5 minutes until well-seared. Grill for another 5 minutes, until well-seared, on the second side. Cook until a meat thermometer inserted in the thickest section registers 130C for rosy pink.
4. Let meat rest for 5 to 10 minutes before serving. Garnish with roasted garlic flakes.

Serve with vegetables, potatoes and sauce of your choice.
