It’s a fresh and light appetiser from Zanzibar

Papaya and Vegetable Salad with Prawns

Serves 4

8 medium, black tiger prawns
150g carrots
120g zucchini
60g cucumbers
1 papaya
1 bunch rocket
30ml olive oil
4ml white vinegar
1 fresh lime
150g onions
2 garlic cloves
15g sesame seeds
Salt and pepper, to taste
Fresh seasonal herbs, to garnish

1. Grate the papaya and marinate with olive oil, lime and a few drops of vinegar.             
2. Cut the carrot, cucumber and zucchini into julienne strips, marinate and season.
3. Add the sesame seeds.
4. Clean the prawns removing the shells, and poach with garlic, salt, pepper and lime.Arrange the papaya salad in the middle of the plate with a few rocket leaves, top with the prawns and garnish with fresh herbs.
