Healthy Recipe: Middle Eastern Mince Kebabs with Spinach Salad

Try this hearty, healthy dish for a taste of the Middle East

1 onion
2 cloves garlic
2 tbsp shelled walnuts
1 bunch parsley
500g minced lamb
1 tsp each of salt, ground pepper, ground paprika
A little cinnamon
1 tbsp oil for brushing
200g spinach leaves
1 pomegranate
100g Greek yoghurt
3 tbsp olive oil
12 wooden skewers

Prep and cook time: 30 min

Soak the wooden skewers in water. Peel the onion and garlic and chop finely with the walnuts. Wash and finely chop the parsley. Mix the onion, garlic, nuts and parsley with the mince. Mix in the salt, pepper, paprika and a little cinnamon and knead well. Divide the mixture into 12 pieces and using moistened hands, form into sausages about 15cm long. Thread onto the skewers and brush with oil. Sort and wash the spinach. Halve the pomegranate and take out the seeds with a spoon, catching the juice. Mix the seeds with the yoghurt, olive oil, salt and pepper. Grill the kebabs at a high heat for about 8 minutes. Mix the spinach with the pomegranate sauce and serve with the kebabs.
