Running multiple kitchens, starting with 40 Kong and EDEN Beach Club for The Crystal Group, is a challenge but also a huge opportunity. I got to create menus from scratch for our new locations in Dubai and Morocco.
It’s important to experiment. Some of my new inventions include a raw garden roll, which is a vegetarian roll with truffle. Integrating very European ingredients into traditional Japanese dishes takes them in a modern, innovative direction. The feedback I’ve received has been wholly positive!
Remember that there are three sides to every story: yours, the other person’s and the truth. I have to step back and respect other people’s opinions, even when I disagree with them. I’ve started putting myself in the other person’s shoes to understand the rationale behind their behaviour.
