“I really admire chefs in Dubai,” booms GARY LEE, The Ivy London’s charismatic Senior Head Chef and regular visitor to the brand’s Dubai outpost, when we visit him to share a couple of his favourite recipes, just for you. “They have to plan so much more carefully than I do back in London. I can get the ingredients I need, any day, just by calling up one of my suppliers. Here, they only really get to place orders twice a week and good ingredients are much harder to get hold of. They have to be organised, and creative, and they do an amazing job,” muses Gary, as we chat in the kitchen of The Ivy Dubai, while he plates up the day’s dishes, Scallops and Onion Purée and Lamb with Vegetables.
