With just four ingredients, this dessert is as easy as it is delicious

Lime and Ginger Sorbet

Serves 12

6 limes, halved
¾ cup sugar
3 cups water
1 tsp grated ginger

1 Use a small knife to remove the flesh from the lime halves, then scoop the remainder out with a spoon and place in a small bowl.
2 Place the lime flesh and juice, sugar, water and ginger in a medium saucepan over a medium-high heat stirring until the sugar dissolves. Remove from the heat.
3 Strain through a fine mesh sieve and pour into a metal tray. Place in the freezer for 2 hours.
4 Use a fork to break up the sorbet by dragging it lengthwise across the container. Freeze for another hour.
5 Repeat until frozen, then scoop into frozen lime shells and serve.
