Lentil Soup


8 cups water
1½ cups small red lentils
3 chicken stock cubes
½ cup onion, finely diced
1 garlic clove, grated
1½ tsp fresh parsley
¾ tsp cumin
½ to 1 tsp turmeric

1 Wash and drain lentils.
2 In a large pot, combine all ingredients.
3 Bring to the boil and then let it simmer on a medium or low heat for about 35 minutes.
4 Make sure to stir occasionally to avoid the lentils burning or sticking to the pot.
5 Serve with lemon wedges on the side.
