Japanese Soba Noodles
400g Japanese soba noodles (buckwheat noodles)
For the dipping sauce
300ml dashi stock
120ml dark soy sauce
60ml mirin (Japanese sweet seasoning)
1 tbsp sugar
For the condiments
40g spring onion, finely chopped
½ sheet nori, cut into strips
1. To make the dipping sauce: combine all the ingredients and bring to the boil. Remove from the heat immediately and put into an ice bath. Set aside in the fridge.
2. Bring 3L of water to the boil, add the noodles and cook until al dente. Stir occasionally to keep them from sticking.
3. As the water returns to the boil, add 120ml of cold water to firm-up the noodles. Add cold water once more during cooking.
4. When the noodles are done, drain and transfer to a large bowl, rinse in ample cold water. When they are cool enough to handle, rub by hand to remove any remaining starch.
