Honey-glazed Cod Fish

Serves 4

880g silver cod fish
100g red capsicum                            
100g yellow capsicum                         
100g green capsicum                                                                                          
200g green asparagus
100g honey

For The Marinade
150ml water                                    
150ml soy sauce                               
50g honey                                    
50ml dark soy sauce                             

For The Coriander Soy Sauce
50ml soy sauce
10ml oyster sauce
40g sugar
100g coriander stems
200ml water
60g potato starch

Remove the bones and clean the cod fish. Marinate for 45 minutes. 
2. Bake the fish in the oven for 13 minutes.
3. Remove from the oven, coat with honey and cook for a further 2 minutes.
4. In the meantime cut the capsicum and asparagus into evenly sized pieces and blanch in boiling water for 2 minutes and then stir fry until tender.
5. To make the sauce: mix all ingredients, bring to the boil and add the potato starch to thicken.
6. To serve, place the fish on the vegetables and pour over the coriander soy sauce.

Top Tip: Blanching vegetables prior to stir-frying helps to retain their crispness.
