Hawaiian Chicken Skewers with Fruity Salsa
Hawaiian Chicken Skewers with Fruity Salsa

INGREDIENTS
700g chicken breasts, cubed 
300g fresh pineapple cubed
3 tbsp honey
1 tbsp brown sugar
Salt and pepper, to taste

FOR THE SALSA
1 cup chopped fresh pineapple
1 cup diced orange
¼ cup shredded coconut 
¼ cup chopped parsley
Salt and pepper, to taste

METHOD
1 In a large skillet, marinate the chicken cubes in honey, brown sugar, salt and pepper for at least 2 hours.
2 Place the chicken on skewers alternating with the pineapple. Grill on medium heat until golden brown. 
3 Meanwhile, mix all the ingredients together for the salsa and season with salt and pepper. Serve in coconuts.

COOK’S TIP
To stop wooden skewers from burning on the grill, soak them in water overnight.
