Green Papaya Salad (Som Tum)

Serves 4

2 tbsp palm sugar
200g green papaya, peeled and shredded
20g cherry tomatoes, halved
20g green beans, cut into small pieces
10g dried shrimp
5g garlic, chopped
100g carrot, julienned
10g peanuts, roasted
2 tbsp lime juice

Cook the beans in a pan of boiling water for 2 minutes. Drain and then plunge into iced water, drain again.
Use a mortar and pestle to pound the chillies and garlic until they are broken down.Add the beans and roasted peanuts, pounding only enough to break them up a little bit.
Combine the shredded papaya, cherry tomatoes, carrots, beans, roasted peanuts and dried shrimp. 
Separately, mix together the lime juice, fish sauce, brown sugar, dried shrimp, chilli and garlic in a small bowl and then pour over the salad.
