Recipe: Garlic Toast and Eggs
16 slices French baguette
4 teaspoons garlic, minced
1 cup olive oil, plus
4 tablespoons olive oil
1 Place the garlic and ¼ cup olive oil in a large bowl and combine.
2 Place a large non-stick frying pan over a medium heat.
3 Spread the garlic mixture on each side of the sliced baguette.
4 Place the slices in the pan and cook until it begins to brown.
5 Add a tbsp of olive oil to the pan (around the bread) and heat for 10 seconds. If desired flip and cook on other side, about 30 seconds more.
6 Place the eggs in a saucepan large enough to accommodate them in a single layer.
7 Fill the pan with cold water, covering the eggs by about 2 ½ cm.
8 Set over a medium-high heat, and bring to a boil.
9 Turn off the heat, cover, and allow the eggs to stand for 1 ½ to 2 minutes.
10 Place the bread on serving plates and top with the eggs. Serve immediately.
