1.5kg white potatoes, sliced into ½ cm thick rounds
2 tbsp butter
2 tbsp olive oil
5 cloves garlic, minced
1 tsp dried thyme
½ tsp dried oregano
½ tsp dried basil
1/3 cup freshly grated Parmesan
Salt and freshly ground black pepper, to taste
2 tbsp chopped parsley leaves
1 Preheat oven to 210C. Lightly oil a baking sheet.
2 In a bowl, combine the olive oil, garlic, thyme, oregano, basil and Parmesan. Season with salt and pepper, to taste.
3 Place potatoes in a single layer onto the prepared baking sheet.
4 Pour the olive oil mixture evenly over the potatoes.
5 Place the potatoes into the oven and bake for 25 to 30 minutes, or until golden brown and crisp.
6 Transfer the potatoes to a bowl and add the butter, stirring to coat the potatoes and melt the butter. Garnish with parsley and serve immediately.
