Recipe: Fruit Compote with Meringue
1 pineapple, peeled and diced
1 papaya, peeled and diced
4 nectarines, peeled and diced
200ml passion fruit juice
200ml coconut milk
2-3 tbsp brown sugar
1 lime, juiced
2 oranges, juiced
2 tbsp cornflour
Fresh mint, chopped
1. Mix together the fruit, passion fruit juice, coconut milk, sugar, lime juice and the juice of one orange in a pot and bring to the boil.
2. Mix the remaining orange juice with the cornflour and, stirring continuously, gradually add the mixture to the fruit to bind it together.
3. Remove from the heat and allow to cool.
4.Transfer to a bowl and serve garnished with crumbled meringue and mint leaves.
