Healthy Recipe: Fried Elderflowers with Cream
8 - 12 sprigs elderflowers
1 egg, separated
175 ml dry white wine
125 g flour
1 tbsp sugar
1 tsp vanilla sugar
1/2 tsp grated orange zest
2 tbsp melted butter fat, for frying
150 ml cream, at least 30% fat
8 g vanilla sugar
Icing sugar, to garnish
1. Mix together the egg yolk, wine, flour, sugar, 1 tsp vanilla sugar and the orange zest. Stir in the butter and leave to rest for 20 min.
2. Beat the egg white with a pinch of salt and fold into the batter. Drag the sprigs of flowers through the batter and fry one after the other in hot fat.
3. Beat together the cream and 8 g vanilla sugar. Remove the flowers from the fat and pat dry with kitchen paper. Dust the flowers with icing sugar and serve with the cream.
