Exotic Fruit Skewer with Vanilla Ice Cream

This is the best way to serve tropical fruit

Serves 4

INGREDIENTS
1 ripe mango
1 pineapple
1 banana
150g sugar
100ml water
Star anise
4 vanilla sticks
200ml vanilla ice cream
Mango compote

METHOD
To prepare the syrup, combine sugar and water, and cook until boiling. Season with star anise and vanilla.
Let the syrup cool down to  about 50C.
Slice all fruit in 3cm sq cubes and marinate in the syrup.
Skewer the fruit on vanilla sticks and serve with vanilla ice cream and mango compote.
