We reveal where you can try the tastiest truffle dishes before the season ends

In Italy, November is renowned as the best month for white truffles, and a handful of innovative Dubai-based chefs have embraced the season and introduced special truffle menus here in the UAE.

Daniele Capobianco at Certo (Radisson Blu Dubai Media City), Richard Stratton at the Cavalli Club (Fairmont Dubai) and Giorgio Locatelli at Ronda Locatelli (Atlantis the Palm) have all introduced menus to educate your palette, having brokered deals like Wall Street traders to bring us these ‘diamonds of the kitchen’ – so-called because they cost upward of $3,000 per kilo and look like the rocky lumps of matter from which diamonds are carved.

Mainly sourced in Alba (by specially trained dogs), but also found in Umbria and Basilicata, these rare and delicate relatives of the mushroom are couriered into the UAE in special containers and then stored in air-tight boxes wrapped in tissue until the moment you place your order. And then the magic happens.

The unique, earthy aroma of a truffle is unleashed when it’s shaved into paper-thin slices, often simply scattered across uncomplicated fish, meat or egg dishes; the dish should never compete with the truffle but rather serve as a platform for it. Inhale, consume and relish.

The compelling and complicated flavour of Cavalli Club’s sweet and savoury white truffle ice cream should not be missed, while their scrambled eggs with white truffle shavings should be crowned the ultimate bridal breakfast, but are equally intoxicating at any time of day. And Ronda Locatelli’s back-to-basics dishes are a nod to founding chef Giorgio’s childhood when he would drive to Alba with his father to buy a truffle at the beginning of every season, taking the treasure home for his mother to add to a simple risotto.
