MAKES 10 PORTIONS

 

INGREDIENTS

FOR THE FILLING

7 eggs

250ml cream

10 lemons, juice only

(zest from 5)

400g sugar

FOR THE TART SHEET

90g castor sugar

110g soft butter

200g flour

1 egg

 

METHOD

1. Preheat the oven to 180C. To make the filling simply whisk together all the ingredients and set aside.

2. For the tart base: mix together the butter and sugar, then add the eggs one by one to create a dough. Allow it to set in the fridge for 10 minutes. Roll the dough into a tart pan and bake at 180C for 7 minutes.

3. Add the lemon filling on to the base and bake for 20 minutes.
