Passion fruit parfait:
350g egg whites
1L passion fruit puree
Dark chocolate mousse:
1400g dark chocolate
1. For the black chocolate mousse – boil the milk, add the chocolate and gelatin. Whip the cream a little, but not too thick. Mix everything together
2. For the passion fruit parfait – boil sugar in 200g water, add the egg whites until the sugar hardens. Boil the passion fruit puree. Mix all ingredients together at the same temperature.
