If, like us, you love going Goan with your food, you're in for a treat. From May 15 to June 15, Spectrum on One at the Fairmont Dubai is hosting home cook and family matriarch Pramilla De Souza, who will be showcasing the authentic cuisine of her home state Goa.

The affable Pramilla, who goes by Mama Chef, offered us a taste of Goan favourites at a preview and we loved the honest-to-goodness flavours across the dishes. Simplicity ruled the airy spinach dappled soup, the beef potato cutlets were hearty in their wholesomeness and subtly spiced to let the meat-and-spud-marriage take centre stage, the lamb had us sweating (but going back for more) with some super powerful chillis, and the king fish curry was a hit when paired with boiled rice ("great to give you strength," Mama tells us). The meal ended with bebinca, the traditional Goan dessert, which got a dash of cool with coconut ice cream.

There are lots of other top Goan dishes you can try out at the promotion, including prawn curry, sorpotel, sanna (dried rice cake), fried pomfret and beef roulade, to name just a few. Mama De Souza is keen to broaden the standard perceptions of Indian cuisine (meaning there's more to it than butter chicken and dal makhni). "I want to challenge my guests’ palates with a completely new kind of Indian dining experience," she says.

And what's the secret to cooking great Goan food spot on? "It's all in the marination," Mama confesses, even telling us what goes into making the superb chicken cafreal – garlic, ginger, green chillis, fresh coriander and lemon juice. So now you know!

At the promotion, you'll also enjoy a family style setting, with dishes prepared and introduced by Mama Chef, as well as the tips and techniques of traditional Goan cuisine, including ingredients such as banana leaves (used to adorn the plates as well as to steam food), coconut oil and milk, tamarind, and piri-piri spice (derived from peppers). Definitely worth discovering and savouring!
