Chocolate Brownie with Praline Ice Cream
Serves 5

125g unsalted butter
55g dark chocolate (preferably Valrhona Araguani 55%)
3 large eggs, beaten
190g caster sugar
30g flour
30g powder
30g cocoa powder
75g pecan nuts, chopped
½ tsp baking powder
150g praline ice cream
40g white chocolate

1. Preheat the oven to 170C.
2. Chop the pecan nuts and set aside.
3. Melt the butter and chocolate together in a glass bowl over a pan of boiling water (a bain marie). 4. Sieve together the flour and chocolate powder into a large bowl.
5. In a separate bowl, whisk together the eggs and sugar until they have doubled in volume.
6. Slowly add the melted chocolate and butter to the eggs and sugar mix, followed by the flour and cocoa powder mix, stirring constantly.
7. Fold in the chopped pecan nuts and pour into a greased baking tray or circular pastry rings and bake for 11 minutes.
8. Serve with praline ice cream, with a little grated white chocolate on top.
