Healthy Recipe: Chicken Satay

For The Cucumber Relish

150ml rice vinegar 8tbsp honey

180g cucumber, peeled, seeded and sliced

3tbsp chopped coriander

2tbsp diagonally sliced chillies

For The Almond Sauce

1tbsp red curry paste

100ml coconut milk

200ml water

50g roasted ground almonds

21⁄2tbsp soy sauce

2tbsp tamarind juice

11⁄2tbsp grated palm sugar

For The Chicken Satay

300g chicken breast, skinned and sliced into thin strips

100ml coconut milk

12⁄3tsp honey

11⁄3tbsp soy sauce

4 coriander roots, minced

3 garlic cloves, minced

1⁄4tsp ground turmeric

1⁄4tsp curry powder

To make the cucumber relish: in a saucepan, bring vinegar and honey to a boil. Stir frequently until honey has dissolved and continue to cook for 15 minutes. Remove from heat, once cooked add cucumber, coriander and chilli and stir.

To make the almond sauce: In a saucepan, stir-fry red curry paste with half of the coconut milk until fragrant. Add all of remaining ingredients and stir. Simmer on a low to medium heat, stirring frequently, until the mixture is reduced by half.

To make the chicken satay: In a large mixing bowl, combine all ingredients and allow chicken to marinate for two hours. Skewer 20g of chicken on 15 wooden sticks. Grill until cooked. Serve warm with relish and almond sauce on the side.

Chiva Som Says... After marinating, skewer the chicken pieces in a broad ‘sewing’ fashion and push the pieces together. This ensures that the cooked chicken is moist and succulent.
