Cauliflower and Onion Pakora Fritters

Ingredients

Pakora Fritters
1 head of boiled salted cauliflower mashed in a food processor
1 cup of gram flour
1 tsp salt
½ tsp crushed red chillies
1 tsp cumin powder
2 tbsp chopped finely fresh coriander
2-3 fresh green chillies, chopped
1 diced onion
Olive oil
1-2 cups water

Mango green chutney
1 bunch coriander (stems included)
5 garlic cloves
½ inch ginger stem
½ onion
2 green chillies
½ tsp cumin powder
½ tsp red chilli powder
1 cup lemon juice
1 green mango
Salt to taste

Method

Pakora fritters
1. Preheat a large sauce pan at a medium high temperature.
2. Mix all the ingredients thoroughly and add water, until a textured batter is formed. Now add a heaped teaspoon of baking soda.
3. Add olive oil to the pan.
4. Drop the small round fritters into the pan and pan fry at a medium high temperature until golden brown.

Mango green chutney
1. In a large blender, combine all the ingredients and pulse. Transfer to a serving bowl.
2. Cover and refrigerate.
